Ingredients

  • 1 cup dry pinto beans

  • 1 cup chicos (dry corn kernels)

  • 1/2 lb salt pork, diced

  • 1 medium-sized onion, chopped

  • 1 tablespoon lard or oil

Directions

Step 1

Clean and rinse pinto beans and chicos.

Step 2

Place pinto beans, chicos, and salt pork in a large, heavy saucepan. Cover in water and bring to a boil.

Step 3

Simmer for 4 hours or until tender. Sauté onion in lard or oil. Add to beans and chico mixture and serve.
