Green Chile with Pork

Ingredients

  • 2 lbs boneless pork (cut into 1 in. cubes)

  • Flour

  • 6 tablespoons lard or oil

  • 1 medium-sized onion (chopped)

  • 2 cloves garlic (peeled and minced)

  • 2 8-oz cans of tomato sauce

  • 2 cups whole corn kernels

  • 1 cup green chiles (chopped)

  • Salt to taste

  • 2 teaspoons oregano

Directions

Step 1

Dredge pork in flour.

Step 2

In a large heavy saucepan, sauté pork in lard or oil until pork loses its red color. Transfer to a plate.

Step 3

Sauté onion and garlic in same pan until onion is slightly wilted.

Step 4

Return meat to pan and add enough water to cover. Simmer for 1 hour or until meat is tender, stirring occasionally.

Step 5

Add remaining ingredients and simmer for 30 minutes.
